Sometimes it’s too hot to use the oven, sometimes it’s just late enough to turn it on and still enjoy dessert. Sometimes it comes together faster when you have help. Sometimes you have to use overhead lighting to capture images, and realize that the sun is going down earlier and earlier.

We started making this well after 8, J washed, diced, and pitted, I pulled and mixed ingredients. I pulled the crumble out of the oven by 9:20, and we were eating it by 9:30. It’s incredible! We used a mix of peaches, apricots, and dark red cherries.

I used this recipe, substituting 2 tablespoons of corn starch for the flour in the fruit mixture. It’s such a versatile recipe. I used a larger dish, and there was more fruit than usual, but it still came out perfectly.
