
Look at this summer produce! I will be making ratatouille this week, for sure (and salad, natch). I’m not entirely certain when, as we are in the beginning of a heat wave (that is bringing with it some sweet thunderstorms), and in the middle of moving. Both have put a damper on wanting to cook or eat anything that can’t be prepared and cleaned up in less than 5 minutes.
Plus! Plus, I still have beets from 2 weeks ago, and two giant yellow squashes I don’t know what to do with. They’ll probably just get roasted, assuming I want to turn the oven on. Hmm!
