Apple cake

I searched a really long time for a good apple loaf/cake recipe. One either already vegan, or that could be made vegan with easy substitutions. One not too soggy or dry. I came across this recipe, and we have made it repeatedly since.

You can leave out the almonds, with no negative results, but the extra crunch is a delight, especially when paired with the honeycrisp apples from the CSA. I used three, they were so big, and saved the fourth for snacking. The cake is light and fluffy, and not too sweet. Eat it warm with salted butter on top to bring out the spices.
